Why is Saffron expensive?

Saffron is one of the world’s most valuable spices due to the labor-intensive process required to produce it. Saffron corms (bulbs) are planted in late summer. By early autumn (October to November), slender green shoots appear, followed by delicate lavender flowers that bloom in late October to early November.

Each flower produces only three red stigmas—the part used as saffron. These must be carefully handpicked, and the stigmas gently separated and dried to preserve their rich color, aroma, and flavor. Saffron is harvested only once a year. With thousands of flowers needed to produce just a small amount of saffron, it's no wonder this spice is so precious.
